Ingredients (2 to 3 servings)

  • 3 Tbsp Olive Oil
  • 100g (¾ Cup) Onion, finely chopped
  • 20g (2 Tbsp) Garlic, finely chopped
  • ¼ to ½ Tsp Chili Flakes
  • 1½ Tbsp Tomato Paste
  • 450–460g (6¼ Cups) White or Cremini Mushrooms, cut into ¼-inch pieces
  • Salt to taste (½ to ¾ Tsp total)
  • 1 Tbsp Fresh Thyme or 1 Tsp Dried Thyme/Italian Seasoning
  • ½ Tsp Ground Black Pepper
  • 12g (1 Tbsp) All-Purpose Flour (regular or gluten-free)
  • 175ml (¾ Cup) Vegetable Broth
  • 3 Tbsp Plant-Based Cream (or to taste)

Garnish:

  • 1 Tbsp Finely Chopped Parsley
  • ¼ Tsp Ground Black Pepper (optional)

Pasta Option:

  • 225g Dry Linguine Pasta (cook as per package instructions)
  • ¼ Cup Plant-Based Parmesan Cheese
  • Ground Black Pepper to taste
  • Drizzle of Olive Oil

Method

  1. Heat olive oil in a pot and sauté onions for 3–4 minutes until soft.
  2. Add garlic and chili flakes, cook on medium-low heat for about 1 minute.
  3. Stir in tomato paste and cook for 1–2 minutes to remove raw flavor.
  4. Add mushrooms, salt, thyme, and black pepper. Cook until mushroom water evaporates (about 6 minutes).
  5. Mix in flour and cook for 2 minutes to eliminate raw flour taste.
  6. Add vegetable broth while stirring to avoid lumps. Bring to a boil.
  7. Reduce heat, cover, and simmer for 5–6 minutes.
  8. Uncover, return to a boil, stir in cream, and cook another minute to desired consistency.
  9. Turn off heat, add parsley and ground pepper. Cover and let rest 1–2 minutes.
