Garlic Mushroom Recipe
This easy, almost one-pot mushroom recipe is perfect for vegan and vegetarian meals. Packed with flavor from garlic, tomato paste, and herbs, it’s a delicious way to enjoy mushrooms in a plant-based diet. Serve it with rice, pasta, mashed potatoes, or crusty bread for a hearty meal.
Ingredients (2 to 3 servings)
- 3 Tbsp Olive Oil
- 100g (¾ Cup) Onion, finely chopped
- 20g (2 Tbsp) Garlic, finely chopped
- ¼ to ½ Tsp Chili Flakes
- 1½ Tbsp Tomato Paste
- 450–460g (6¼ Cups) White or Cremini Mushrooms, cut into ¼-inch pieces
- Salt to taste (½ to ¾ Tsp total)
- 1 Tbsp Fresh Thyme or 1 Tsp Dried Thyme/Italian Seasoning
- ½ Tsp Ground Black Pepper
- 12g (1 Tbsp) All-Purpose Flour (regular or gluten-free)
- 175ml (¾ Cup) Vegetable Broth
- 3 Tbsp Plant-Based Cream (or to taste)
Garnish:
- 1 Tbsp Finely Chopped Parsley
- ¼ Tsp Ground Black Pepper (optional)
Pasta Option:
- 225g Dry Linguine Pasta (cook as per package instructions)
- ¼ Cup Plant-Based Parmesan Cheese
- Ground Black Pepper to taste
- Drizzle of Olive Oil
Method
- Heat olive oil in a pot and sauté onions for 3–4 minutes until soft.
- Add garlic and chili flakes, cook on medium-low heat for about 1 minute.
- Stir in tomato paste and cook for 1–2 minutes to remove raw flavor.
- Add mushrooms, salt, thyme, and black pepper. Cook until mushroom water evaporates (about 6 minutes).
- Mix in flour and cook for 2 minutes to eliminate raw flour taste.
- Add vegetable broth while stirring to avoid lumps. Bring to a boil.
- Reduce heat, cover, and simmer for 5–6 minutes.
- Uncover, return to a boil, stir in cream, and cook another minute to desired consistency.
- Turn off heat, add parsley and ground pepper. Cover and let rest 1–2 minutes.

- Stir thoroughly after adding broth to prevent flour lumps.
