Ingredients

  • 1 head cauliflower
  • 2 medium carrots
  • 1 onion
  • 3 cloves garlic
  • 16 oz portobello mushrooms (or jackfruit for mushroom-free)
  • 2 Tbsp Italian seasoning
  • 1 Tbsp paprika
  • 2 tsp sage
  • 2 tsp garlic granules
  • 1 tsp thyme
  • 1 tsp oregano
  • 2 tsp cumin powder
  • 1.5 cups walnuts – optional, soak for softer texture
  • 3 Tbsp tomato paste
  • 3 tsp salt (adjust to taste)

Instructions

  1. Coarsely chop cauliflower, carrots, onion, garlic, and mushrooms (in batches if needed) using a food processor.
  2. Chop walnuts with tomato paste until combined.
  3. In a 3‑qt (or larger) pan, cook the veg‑mushroom mix over medium heat ~5 min until liquid starts releasing.
  4. Increase heat to high and cook, stirring, until most liquid evaporates (~5–10 min).
  5. Stir in all the seasonings; continue cooking on high until the pan is almost dry.
  6. Remove from heat, stir in walnut–tomato paste mixture until well combined.
  7. Serve in tacos, bowls, pasta, or any dish of your choice. Enjoy!

Variations

  • Nut‑Free: Skip walnuts and add 8 oz extra mushrooms (coarsely chopped) for texture.
  • Mushroom‑Free: Use an equal amount of jackfruit, shredded or chopped.

Storage

Refrigerate for 3–5 days, or freeze. (This one rarely lasts more than a couple weeks!)
